Young winemakers settled since 2004, we took over a part of our family's Domaine. Since the Spring of 2006, we have been converting to organic agriculture. For the vinification, we harvest when optimal ripeness has been obtained. Fermentation progresses in a leisurely fashion with natural yeasts. Once these fermentations are finished the wines are aged on the dregs ("lies fines"). We make different appellations : Mâcon Village "Vieilles Vignes", Viré-Clessé (which also exists aged in oak barrels), and sparkling wine (crémant de Bourgogne).
