Marcel Soyer, until then a cooper, decided to supplement his activity by growing vines at the end of the 1950s. He set up the estate by acquiring plots of land in Nuits-Saint-Georges and in the Hautes-Côtes de Nuits, in Chaux, most of which he planted. His grandson Laurent took over the reins in 1988 and continued the family tradition by developing bottled sales. The estate now covers 3.45 hectares, where parcel-by-parcel vinification is paramount in order to reveal the typicity and complexity of each terroir cultivated. The grapes are hand-harvested, sorted and selected, undergo alcoholic fermentation using indigenous yeasts in concrete vats, put into barrels by gravity and matured for 18 months...
