The Domaine du Cellier aux Moines was founded around 1130 in Givry by the Cistercian monks of the Abbey of La Ferté, the first daughter of the Abbey of Citeaux.
Having fallen into oblivion, it was acquired in 2004 by Philippe and Catherine Pascal and their children, who restored it and brought it back to life in 2006.
The estate covers 12 hectares, including 5 hectares of the historic Clos du Cellier aux Moines, a Givry premier cru, as well as a number of Côte de Beaune premiers crus, Puligny Montrachet Les Pucelles, Chassagne Montrachet Les Chaumées, Santenay Beauregard, Volnay En Chevret, and a number of white Côte Chalonnaise crus, two Montagny premiers crus and a Mercurey village.
Guillaume MARKO is the vineyard and wine technical director of the estate, of which he is co-manager. The estate is run biodynamically, and has been certified organic since 2020 and biodynamic since 2023 (Biodyvin).
In 2015, the estate acquired a total gravity vat room on 4 levels, 3 of which are underground, which is quite unique in Burgundy.
