Daniel-Etienne Defaix is a winegrower and producer of historic Chablis Premier Cru wines and is considered a specialist in collectors' vintages, or those aged 8-12 years. Daniel-Etienne Defaix Chablis Premier Crus can be found in some of the world's best restaurants. He was also a pioneer of wine-tourism in the region, launching his offer in 1985.
The Domaine Defaix is made up of one historic 28-hectare vineyard and 12th-century cellars along with the 38-room Aux Lys de Chablis Hotel*** and restaurant. Some 18 Bourgogne liqueurs, crèmes and spirits complete the range on offer. Visitors are welcome seven days a week, both individuals and groups, and also seminars, sommeliers and cooking schools. Closed in January.
