Pre-heat the oven (180°C)
Peel and chop the onion. Chop the parsley. Cut the cap of the tomatoes. Scoop them out with a large spoon.
Place the chopped tomato hearts in a bowl.
Add in the bowl the sausage meat, chopped onion, chopped parsley, egg and breadcrumbs. Add salt and pepper and mix well.
Fill the tomatoes with the stuffing and place them in a baking dish. Sprinkle with breadcrumbs. Place a small cube of butter on top of each tomato.
Pour a little water in the baking dish before putting it in the oven for 40 minutes
You can replace the sausage meat with minced beef
4 large tomatoes (or 8 medium)
Half a bunch of flat leaf parsley (washed and chopped)
1 chopped onion
700 g of sausage meat
20 g of butter
100 g breadcrumbs
Salt and pepper
