We use common sense to harvest quality fruit at a time when climate change is having an impact on harvests. We adjust the harvest date for each plot, to ensure optimum ripeness.

In the winery, we don't intervene too much in the vinification process, focusing on the work done on each parcel. The juices are gently transferred by gravity, without the use of sulphites or selected yeasts during alcoholic fermentation.
