Daniel-Etienne Defaix is a winemaker producing historic Chablis 1er cru.
A specialist in vintage wines (8 to 12 years old), his Chablis Premiers Crus Daniel-Etienne Defaix can be found in the world's finest restaurants.
He has also been one of the pioneers of wine tourism in Burgundy since 1985.
Domaine Defaix comprises a 30-hectare historic vineyard with 12th-century cellars for tasting and sale, and a 38-room Hôtel***-Restaurant Aux Lys de Chablis. 18 liqueurs, creams and Burgundy spirits complete the range. Reception for individuals, groups, seminars, cookery or sommelier schools. Closed in January.
