Description *: In the Cellier aux Moines estate in Givry, located in the heart of the Côte Chalonnaise, exceptionally open to the public for this event, Emmanuel NONAIN, guide and manager of Enoculture, will lead the conference alongside Philippe PASCAL, owner of the estate, Guillaume GRILLON and Marion FOUCHER, members of the Climats scientific council and historians. They will discuss the economic model in general and the Cistercian viticulture in particular
They will then present the "Cellier aux Moines" as a dependency of La Ferté and will finish by talking about the Climats of the Abbey of Maizières in Saône-et-Loire. It will be followed by a tasting of 3 Cistercian wines selected and presented by Raoul SALAMA, oenogastronomic journalist and professor at the Polytechnic School of Paris.
