Food and wine matching course
On 6 and 7 May, the BIVB and the Burgundy Wine School organised a new seminar for key trade influencers: a two-day course in Beaune solely devoted to food and wine matching. This course, given by Olivier POUSSIER, named “best wine waiter in the world” in 2000, has been designed to provide an understanding of the basics of accompanying Burgundy wines. Participants will learn about the fundamentals of food/wine matching, how to understand the “spirit” of a dish, how to choose matches which either complement or contradict the dish, correct temperature, the rules for combining wine with the main types of preparation, and much more.
